No Storm, & I Really Can Cook

Ok, for starters, I am NOT happy with the weatherman at all....all 3 of them. They lied and they lied BIG time. They went on and on about how bad things were going to be. Even went so far as to post bulletins about it. I went to Target yesterday and people were crazy...buying flashlights, blankets, jugs of water. As if a nuclear bomb might be going off.

And what happened? Nothing. Oh sure, there was rain, and for those people who got a LOT of rain, I do feel bad for them. I'm sure the mess with all the flooding is unbelievable. Again, I'm sorry for their pain. But we here got nothing...maybe a little rain. 1/2" tops. A little lightening, a few rumbles of thunder and that was it. We spent considerable time yesterday getting things "ready" for the big storm. We moved our mini horses from their mini barn into the big barn. We moved the camper and horse trailer so they would be hopefully a little protected from the wind. Jay made sure we had fresh batteries in the flashlights. I grabbed our supply of candles and had them and a lighter on the counter in the kitchen. We had the tv (without satellite) on, tuned to the channel that was having constant coverage. I even made sure my camera battery was fully charged so I could get some awesome storm photos. Nothing, nada, nil. What a disappointment.

On another note, I decided to resurrect my image of being a total non-cooker by baking some muffins. I found a great recipe using no flour (you use oatmeal instead) and was super excited. They have blueberries and bananas in them and the kitchen smelled so good! The recipe made 2 dozen muffins and were so soft you couldn't cool them on a regular cooling rack or they fell through. Yum! As my children looked at them as though they were some form of freak of nature, I saw the usual wrinkled noses and curled brows as they asked "Uh what are those?" "Muffins". "No they're not...THESE are muffins" Ashley said as she pointed to the box of Betty Crocker muffins in the cupboard. "But these are healthier" I quickly added. "Maybe" she replied "But these look a whole lot better!" I was ok with that because that meant more for me. I put 2 each in a baggie and placed them in the freezer so I could have them for breakfast over the next couple of weeks. They actually were really good. The only thing I will do different is that I will add less blueberries and replace that with more bananas. The blueberries were so overpowering, I didn't taste banana at all. And I do love my naners.

So, there you have it. Proof that I CAN cook. It just doesn't happen very often and the results aren't always edible, but I can actually do it from time to time. So stop in for a muffin. Really, they are good!
